Strawberry Banana Bread with Vanilla Bean Glaze by Guest Chandra
Hello Again! I’m Chandra and I am so happy to be here sharing with you. Cami is so sweet to share all her wonderful readers with me and I am so grateful.
I am sure that just like me you adore banana bread. I mean really what’s not love? You can mix it by hand it’s about the most simple bread to make and it tastes AMAZING!!!
The only thing that would be better than just banana bread alone is adding Strawberries to it! Strawberry Banana Bread with Vanilla Bean Glaze will be your new favorite.
Look at all those plump red juicy strawberries! And the Vanilla Bean Glaze….. Oh My!

How to Make Strawberry Banana Bread
Ingredients
Cake
- Ripe bananas
- Sugar
- Eggs
- Milk
- Vegetable oil
- Baking soda
- Baking powder
- pinch of salt
- All-Purpose flour
- Vanilla Extract
- Strawberries sliced and tossed in flour for the cake
Vanilla Glaze
- Powdered sugar
- Vanilla pod beans scraped out {or 2 tsp vanilla extract}
- Milk
Instructions:
- Preheat oven to 350
- Grease a mini loaf pan or full loaf pan
- In a medium bowl, sift flour, pinch of salt, baking sode and baking powder.
- In a mixer combine the vegetable oil, mashed bananas, vanilla, and sugar till mixed and fluffy.
- Add the eggs one at a time letting each combine
- Add in the milk
- Slowly add the flour mixture and mix till all is combined and a nice batter forms
- Fold in gently the strawberries
- Pour batter into prepared pans
- Bake 45-50 min {35-40 for a gooey middle}
- Let cool in the pan for 30 min.
- Then carefully turn out and let cool completely
- Mix all the glaze ingredients.
- Let it set for 15-20 minutes and drizzle over cooled bread
- Serve with extra strawberries
Baking tips
Here are a few tips for making Strawberry Banana Bread with Vanilla Bean Glaze:
- If you don’t have or don’t want to use a whole vanilla pod you can substitute for 2 tsp of vanilla extract
- Toss the strawberries in a little flour before you fold them into the batter. This will keep them from falling to the bottom of the bread.
- I like to underbake my bread just a little to keep it really moist. The only problem with that is it falls in the middle. {see strategically placed strawberry on top}
- Add a touch of lemon zest to the batter for a bright and tangy twist that complements the sweetness of the strawberries and bananas.
- Before drizzling the glaze over the bread, poke a few small holes on top using a toothpick. This allows the glaze to seep into the bread, infusing it with even more flavor.

Leftovers, Storing and freezing
Once the bread has cooled, store the bread in an airtight container at room temperature for up to 3 days. If you want to extend its shelf life, you can refrigerate it for up to a week.
To freeze, wrap the bread tightly in plastic wrap and place it in a freezer bag. It can be frozen for up to 2-3 months. Thaw it in the fridge overnight when you’re ready to enjoy it again.

Can I use frozen strawberries instead of fresh ones?
Adding bananas and strawberries to your baking creates an incredible level of moisture, making it nearly impossible to end up with a dry loaf. I opted for fresh strawberries in this recipe, but you can certainly use frozen ones. Just keep in mind that frozen strawberries tend to release more juice, so you might need to adjust by adding additional flour to maintain the right consistency.
Can I use ripe bananas or do they need to be overripe?
Ripe bananas are perfect for this recipe. They should have a few brown spots for maximum sweetness and flavor. If they’re not overly ripe, you can always mash them to achieve the desired consistency.
How long does the Vanilla Bean Glaze take to set?
The glaze typically takes about 15-20 minutes to set at room temperature. If you’re in a hurry, you can pop the bread in the refrigerator for a few minutes to speed up the process.
Can I substitute the vanilla bean with vanilla extract?
Absolutely! If you don’t have a vanilla bean on hand, you can substitute it with 1-2 teaspoons of vanilla extract. Just be aware that the flavor might be slightly different.
