I shared this recipe first on Spend With Pennies.

I don’t know about you, but around here we love peanut butter.

We love it in our oatmeal, on our toast, in our desserts (any and all of them, please!), our Banana Cream Pie, and these Peanut Butter Chocolate Chip Cookies.

But these easy Peanut Butter Cookies?

They’re some of our favorites.

These cookies are so easy to throw together, and you can mix them up in a variety of different ways to make them more exciting (but really, who needs to detract from that glorious peanut butter?!)

How to make easy Peanut Butter Cookies:

  1. Combine your butters: cream your butter and peanut butter together until smooth.
  2. Add your sugars: be sure you whip your sugar in until it’s light and fluffy! It will become noticeably lighter in color and texture.
  3. Beat in your eggs and vanilla — just until smooth and combined.
  4. Add your dry ingredients — Don’t pack your flour in the cup! Be sure to fluff and level your flour to avoid dry, crumbly cookies! Mix until the dough comes together.
  5. Bake — but don’t overbake! Overbaked cookies are dry and hard and not soft and chewy like they should be. Make sure you bake until they appear just set, even a little glossiness in the center is okay. They will continue setting up on the hot pan out of the oven. I find 9 minutes is perfect for 1″ dough balls.

Variations on these Peanut Butter Cookies:

  • Can’t resist the urge to add chocolate to peanut butter? How about a chocolate drizzle! Simply melt some chocolate carefully, then pour it into a ziploc bag, snip the end and drizzle over cooled cookies.
  • Stir in some chopped peanuts for a double whammy peanut butter cookie.
  • Add some chocolate chips, white chocolate chips, M&Ms (oh my word, how amazing would those be??), or butterscotch chips for a new spin your family will go crazy for!

How to store peanut butter cookies:

There are two ways to store these peanut butter cookies if you happen to have leftovers that last beyond the first couple hours on the counter 😉

  • Room temperature: You can store these cookies in an airtight container at room temperature for up to 4-6 days (they will last past that point, they just won’t be as good). The only problem with storing them at room temperature is you know they’re not going to last long! The freezer is a much safer option 😉
  • In the freezer: these cookies can be frozen in an airtight container or freezer bag up to 3 months. This means you always have something delicious on hand if surprise guests drop in or you need an after school snack!

I promise, you don’t need much! Here’s what I use to make this recipe the best it can be:

  • A mixer: cookie dough is a tough thing to mix by hand! I use either my KitchenAid hand mixer or KitchenAid stand mixer (what can I say, I’m loyal!) — it makes the dough come together so quickly and easily!
  • Good baking sheets: dark non stick baking sheets will make your cookies brown faster, so I like to use a light or medium colored baking sheet — you can choose what you like depending on how brown you like your cookies to be on the bottom.
  • Parchment sheets: Once I started using parchment paper for cookies I never went back. There’s no worrying about sticking, no scrubbing pans, and – bonus! – you can reuse parchment paper for all the cookies. Just brush it off, fold it up and stash it in a cupboard for next time.

  • Add sugars and beat on high speed until light and fluffy – 2-3 minutes.

  • Add eggs and vanilla and beat on low speed until combined.

  • Add flour (fluffed and levelled!), baking soda and salt and beat on low speed just until cookie dough comes together.

The cookies taste great, but they are too pale in color. I even used dark brown sugar, but they look more like a sugar cookie. Lovely flavor, but I think I need to keep looking.

    • The Recipe Rebel says

Hi Darla! It’s pretty typical in a peanut butter cookie for it to be lighter in color. You could try using a different rack in your oven if you are looking for a darker color.

FAQs

What is the secret to soft cookies? ›

Baking cookies quickly in a hot oven – at 375 degrees F as opposed to a lower temperature – will make for soft results. They'll bake fast instead of sitting and drying out in the oven's hot air. Ever so slightly underbaking your cookies will give you softer results than cooking them the full amount the recipe says.

Why are my peanut butter cookies always hard? ›

Why did my peanut butter cookies turn out hard? This is most likely to happen from over-baking your cookies. Make sure to take them out of the oven when they're still a bit soft in the middles, that way they can finish cooking on their cookie sheets outside the oven.

Why are my 3 ingredient peanut butter cookies falling apart? ›

There are a few reasons why your cookies are falling apart. The wrong ratio of ingredients, such as too little sugar or peanut butter will make them fall apart. The wrong type of peanut butter may cause them to fall apart. Or using old eggs may create crumbly cookies.

Why do my peanut butter cookies not taste like peanut butter? ›

The most common mistake with peanut butter cookies is using the wrong type of peanut butter. The BEST peanut butter for today's cookies is a processed creamy peanut butter, preferably Jif or Skippy.

How do you make cookies soft instead of hard? ›

There are a few things you can try to get soft, chewy chocolate chip cookies:
  1. Use a higher ratio of brown sugar to white sugar. ...
  2. Use more egg yolks and less egg whites. ...
  3. Add a bit of cornstarch to the dough. ...
  4. Make sure you're using the right type of flour. ...
  5. Don't over-bake the cookies.

Should you refrigerate peanut butter cookie dough before baking? ›

Chill your cookie dough! The dough is extremely soft due to the creamy peanut butter, eggs, and butter and if it's not cold going into the oven, the cookies will spread all over your baking sheet. I chilled this cookie dough for 24 hours and my cookies were soft, thick perfection.

Is it better to use butter or shortening in peanut butter cookies? ›

Your other source of fat should be butter, not shortening. Butter will make your cookies taste buttery; shortening will make them taste suspiciously vacant, like Katy Perry's voice post-autotune. Yes, shortening yields chewier cookies than butter does, because butter contains water and shortening doesn't.

What happens if you add too much peanut butter to peanut butter cookies? ›

This may not sound like a lot, but it is enough that it can affect the quality of your cookies – adding too much peanut butter can make them dry, hard, and crumbly.

What happens if you don't flatten peanut butter cookies? ›

If you don't flatten the cookies first, then the fork does double duty – it performs both functions. One very subtle result of creating the pattern is that the little tips of dough bake up crisper than the rest of the cookie, giving you both a bit of additional texture and deeper taste where the dough is more baked.

Why do you smash peanut butter cookies? ›

The 1932 or 1933 recipes do not explain why this advice is given, though: peanut butter cookie dough is dense, and without being pressed, it will not cook evenly. Using a fork to press the dough is a convenience; bakers can also use a cookie shovel.

Why do you cross peanut butter cookies? ›

Peanut butter cookie dough is denser than a lot of other cookie doughs. Putting the hash marks in the cookie dough balls actually flattens them for more even baking. Without being pressed, the cookies will not cook evenly.

How do you moisten peanut butter cookie dough? ›

Dry – “Dry” or “Crumbly” dough is a product of over-mixing or using too much of any ingredient during the mixing process. This can be reversed by adding one to two tablespoons of liquid (water, milk or softened butter) to your mix.

What kind of peanut butter is best for baking cookies? ›

Peanut butter: Creamy peanut butter is ideal for this recipe because crunchy peanut butter creates an overly crumbly cookie. You can use processed peanut butter such as Jif or Skippy, or natural-style peanut butter.

Why are my peanut butter cookies too soft? ›

If the dough seems too soft, chill it for 10 to 15 minutes before baking. Use shortening instead of butter or a combination of the two if you don't want to sacrifice that buttery flavor. The dough was too wet. Using the wrong size egg could also add extra liquid, resulting in too much spreading.

Why do my cookies get hard after they cool? ›

Cookies begin losing moisture through evaporation from the moment that they come out of the oven. So it's totally normal for them to harden up a bit. Yet, this is why you need to store them in an airtight container once they completely cool or they will continue to lose moisture.

What are 3 factors that contribute to a chewy cookie? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

What factors which allows cookies to be crispy soft and chewy? ›

Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies. Why use melted butter? Melted butter creates cookies with a different texture compared to cookies made with softened or creamed butter.
