How to Make Fried Brownie Truffles:

  1. Use your hands to crush up your leftover brownies into small pieces.
  2. Then mix the brownie pieces together with cream cheese and chocolate chips.
  3. Roll the brownie mixture into 1-inch balls, place them on a baking sheet, and then freeze them for at least 30 minutes.
  4. When you’re ready to fry them up, heat canola oil in a dutch oven on the stovetop. The oil should reach 350°F before frying.
  5. Whisk together flour, sugar, cocoa powder, baking powder, salt, egg, and soda water to make the batter while the oil heats up.
  6. Coat each brownie ball in the batter, and carefully place in the oil. Fry 3-4 at a time. Each one should take about 2 minutes to get crispy on the outside.
  7. Use a slotted spoon to remove the brownie bites from the oil, and repeat the process with the rest.

Once you’re done, just sprinkle some powdered sugar over them and serve warm. These little fried brownie truffles are just so delicious!

Ingredients

  • 8 brownies homemade or store-bought
  • 4 ounces low-fat cream cheese 114 grams (½ brick)
  • ¼ cup chocolate chips 43 grams
  • Canola oil for frying
  • 2 cups all-purpose flour 240 grams
  • 1 tablespoon granulated sugar 13 grams
  • 1 tablespoon unsweetened cocoa powder 5 grams
  • teaspoons baking powder 5 grams
  • ¼ teaspoon kosher salt
  • 1 large egg 50 grams
  • cup soda water 397 grams
  • Powdered sugar optional, for garnish

Instructions

  • In a large bowl, crush the brownies. It's easiest to just use your hands to crush up the brownies into small pieces.

    8 brownies

  • Using a wooden spoon, mix together the crushed brownies with the cream cheese and chocolate chips. Stir until well combined. It doesn't have to be perfect.

4 ounces low-fat cream cheese, ¼ cup chocolate chips

  • Using your hands, roll the brownie mixture into 12 1-inch balls and place them on a parchment-lined baking sheet. Place in the freezer for a minimum of 30 minutes.

  • When ready to fry, place 1½ inches of canola oil in a Dutch oven set over medium-high heat. You want the oil to get to 350°F.

    Canola oil

  • While the oil is heating, whisk the flour, sugar, cocoa, baking powder, salt, egg, and soda water together until smooth.

2 cups all-purpose flour, 1 tablespoon granulated sugar, 1 tablespoon unsweetened cocoa powder, 1¼ teaspoons baking powder, ¼ teaspoon kosher salt, 1 large egg, 1¾ cup soda water

  • Working in batches, coat each brownie bite in the batter mixture and then fry 3-4 at a time. Fry until the outer coating is crispy, turning once. I fried each bite for about 2 minutes, but times might vary.

  • After done, use a slotted spoon to remove from the oil and place on a paper towel to drain.

  • Dust with powdered sugar and serve warm.

    Powdered sugar
